Shortbread Cookies (2 recipes)

     Until a few months ago, I'd never made shortbread cookies before.  They have an interesting taste, different from sugar cookies, more buttery and crisp, but still delicious.  I tried out two different recipes, both of which I loved and will make again.  Other than me, a lot of other people I gave some to loved them as well, so it's safe to say they are tasty! :)




First Recipe:  The first recipe (picture above) I tried is slightly more complicated because it involves cutting the cookies and making a little shape in the middle.  I found the recipe here on one of my favorite food blogs.  They used a star cutout for the cookies, but I couldn't find one, so I just cut out a circle.  I also made a few heart shaped ones, obviously you could make any shape you want or whichever cookie cutters you can find/have.  I love these cookies because I remember eating similar ones as a child around Christmas time at all my Italian family's houses.  I think these taste best with raspberry jam, but you could use whatever jam you like and they'll still be good.




Second Recipe: 

  The next recipe is a little simpler.  It's also cute and fun to make.  I found this one here and it's made by one of my favorite singers, Michelle Branch, who also loves to bake.  I used apricot and blackberry jam, but of course, you can use whatever jam or other filling you'd like.  It's fun to make these with a few different fillings so it seems like you have different types of cookies.  Also, you may want to double this recipe because I don't think it made that many...especially if you have a lot of cookie-loving people around who want to eat them, hehe!  My little nephew love cookies and whenever I see him he always asks for cookies, which he used to call "toochies," so cute!
